Apple Pie Recipe

My basic apple pie recipe starts with a flavorful and flaky crust, sandwiched around just the right amount of spice and apples.

My philosophy on all good fruit pies – keep it simple. When you have good fruit, and a good crust, you don’t need much else. So I cut out the nutmeg, ginger, all spice, cloves, and whatever other spices. This apple pie recipe is just cinnamon, sugar, apples (and love) inside. I mix at least 2 types of apples; a combo of granny smith, golden delicious and Pink Lady apples (when I can find them).

Ingredients

  • First, you’ll need the recipe for my basic crust here.
  • 6 medium sized apples – peeled, cored, and sliced thinly
  • 1 Tbsp fresh squeezed lemon juice (or lime, or from a bottle if you’re desperate)
  • 1/3 cup packed brown sugar
  • 1/3 cup white sugar
  • 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp cinnamon

Instructions

  1. Create the crust. While it is chillin’ in the fridge, prep your filling and preheat the oven to 450 degrees.
  2. Slice the apples and toss them with the lemon juice. I like some apples sliced really thinly and others don’t need to be so thin- this just adds to the texture!
  3. Mix the sugars, flour, salt and cinnamon together in a small bowl separately.
  4. Roll out your bottom crust and place it in the dish. Chill it in the fridge or freezer while you roll out the top crust.
  5. When both crusts are ready, toss the sugar mixture in with the apple slices, so that the sugar mixture coats the apples.
  6. Put the filling in the pie dish over the bottom crust. Top with the remaining crust. Fold the top crust over the bottom crust, and press the edges. Cut 3-4 slits in the top crust, and brush with egg wash.
  7. Bake at 450 degrees for 15 minutes, then reduce to 375 degrees for 30-45 minutes. You know it is done when the filling is bubbling and the crust is a mouth watering golden brown.
  8. Allow to cool for at least one hour to let the filling set (or it will be runny).
  9. Feel free to garnish (or not- no pressure). I sliced another apple (skin on for color) and arranged it in a pinwheel with a sprig of mint and a cranberry on tip. Enjoy your beautiful and delicious creation!
